This edition's activity by one of the Festival's co-organizers will be dedicated to a topic that is on everyone's lips, but is actually a great unknown. Xavier from Ferment Project and Brebel Beer will unveil what Umami is. Why it's called that, when it was discovered, and by whom... We will dissect its components to understand the 5th taste and identify the foods that have the most umami. To conclude, we will learn how to enhance it in the kitchen by combining foods, components, or using various techniques. Additionally, we will explore some of their projects with koji to create foods full of umami.
