Taking advantage of the gathering of different experts in fermentation, we will sit down and have a good discussion about the practical applications of ferments. Because not only do microorganisms help us create delicious food, but they can also be used in unexpected areas. We will explore in a roundtable discussion how ferments have accompanied us throughout antiquity and have been the foundation of civilizations, and how they currently have a place in architecture, circular economy, the creation of new materials, and sustainability.
